¾ cup almond flour
¼ cup coconut flour
½ cup bran flakes (no raisins)
¼ cup ground flax seeds
1 tsp THRIVE baking powder
1 tsp THRIVE baking soda
1 tsp cinnamon
2 THRIVE eggs, reconstituted
¼ cup Truvia Baking blend
1 tbsp avocado oil or olive oil or coconut oil
1 tsp vanilla extract
2/3 cup plus 1 tbsp THRIVE Milk (reconstituted)
¼ cup maple syrup
¼ cup THRIVE carrots
½ cup THRIVE apples
Preheat oven to 350F. Line muffin tray liners for 12 muffins
Combine carrots and apples into a bowl. Just cover with water and allow to rehydrate for 10 min. (optional to use THRIVE Apple drink for rehydrating)
Mix flours, bran flakes, flax seeds, baking powder, baking soda, cinnamon and salt together.
Whisk egg and sugar together in a medium bowl. Mix in oil and vanilla, then whisk in milk. Use a wooden spoon to stir in carrots and apple, then pour the egg mixtures over the flour mixtures. Stir just until combined.
Divide batter out evenly, filling the muffin liners ¾ of the way. Bake 20 min. Let cool before serving.
